Ingredients:


1.5 cups of sprouted bajra poha

1 medium sized finely chopped onion

1 medium sized potato chopped small

2 green chillies finely chopped

1 tablespoon roasted peanuts 

5-6 curry leaves

1 teaspoon Local Sparrow cumin seeds

1 teaspoon Local Sparrow mustard seeds

1 teaspoon Waigaon turmeric powder

Salt to taste

2 tablespoons cold pressed groundnut oil (any oil of your choice)

Juice of half a lemon (optional)

Freshly grated coconut (optional)

Fresh coriander leaves 


Recipe:

  • Rinse bajra poha and drain the water completely. Keep it aside while you ready the tempering.
  • In a thick bottom pan, heat oil, add curry leaves, cumin and mustard seeds, chillies. Add onion and potato and mix well and cook until onion turns pink and potato is soft.
  • Add peanuts and roast for a minute or until they crackle a bit 
  • Add turmeric powder, salt and add a couple of tablespoons of water
  • Add soaked sprouted bajra poha and mix well
  • Sprinkle coriander powder, lemon juice and mix well
  • Cover with lid and let it cook for a minute
  • Turn off the heat and serve hot!

Tip- You can add more veggies like peas and carrots as per your preference to make this a tad healthier. You can also sprinkle freshly grated coconut on top before serving.
